We are always on the lookout for products that live up to the Gustare Gourmet standard: thoughtfully made, honestly sourced, and genuinely delicious. That is why we are thrilled to welcome LEGÙ to our shelves: a family of pasta, soups, flours, and snacks made from 100% Italian legumes and imported from Italy.

If you have never tried legume-based pasta before, LEGÙ is the one to start with. Here's why:

What Is LEGÙ?

LEGÙ was founded in Albizzate, Italy, by Monica Neri. Neri turned to legumes after being diagnosed with gestational diabetes and remembered how her grandmother in Mantua ate them daily, calling them "the meat of the poor." That personal story became a mission: bring legumes back to the center of the modern table, with products that are naturally gluten-free, rich in plant protein and fiber, and made without a long ingredient list.

Every LEGÙ product starts with legumes grown in Puglia, Sicily, the Marche, Abruzzo, and Tuscany, nowhere else. Nothing is imported or blended with filler starches to cut costs.

Not Your Average Legume, Vegetable, Plant-Based Pasta

Most legume pastas on the market are made by milling raw legumes into flour and extruding it- a process that can leave pasta gummy, bland, or prone to causing the digestive discomfort legumes are (unfairly) known for.

LEGÙ does it differently. Their legumes go through a four-step process before they ever become flour:

  1. Dehulling — removing the outer skin, which is the primary cause of bloating
  2. Extended soaking
  3. Steam-cooking
  4. Low-temperature drying

Only after this process are the legumes milled. The result is pasta, soup, and snack products that are noticeably more digestible, with a naturally lower glycemic index than conventional pasta, without sacrificing texture or flavor.

The Numbers Behind the Bowl

A little goes a long way nutritionally. LEGÙ's 100% legume pasta delivers:

  • Up to 25g of protein per 100g (versus roughly 13g in traditional pasta)
  • Up to 15g of fiber per 100g (versus roughly 3g)
  • A complete plant-based amino acid profile, thanks to blending multiple legumes (chickpeas, lentils, peas, and beans) in a single recipe

A single 50g serving (about 120g once cooked) provides roughly 12g of plant protein; enough to stand in as a main protein course. It's also certified gluten-free, 100% plant-based, and made without eggs, dairy, or animal derivatives of any kind.

What to Try First

LEGÙ's lineup goes well beyond pasta shapes like Eliche, Penne, and Paccheri. You'll also find:

  • Ready-in-minutes soups, like their Saporita and Delicata blends, built on legumes, vegetables, and even kale and spirulina
  • Legume flour blends, perfect for pancakes, crêpes, muffins, and homemade piadina
  • Crunchy savory snacks, like their oregano and classic triangles, for when you want something satisfying without the fry oil
  • Plant-based burger and patty mixes, ready in just a few minutes

LEGÙ recommends the "risotto method": warm a splash of water with a pinch of salt and a drizzle of extra virgin olive oil, add the pasta, stir, and cover for two to three minutes. It's ready before you'd even have a pot of water boiling for regular pasta.
