The perfect bite!
Ingredients
-
2 tbsp. Bee Boss Honey
-
2 tsp Gustare Italian Fig Balsamic Vinegar
-
1 tbsp. Gustare Pepperoncino Garlic EVOO
-
1 lb fresh sea scallops – Chatham Harvesters are Gustare’s favorite!)
-
½ lb thin-sliced bacon, halved crosswise
Directions
Whisk together honey, balsamic vinegar, and olive oil in a small bowl. Set aside.
Rinse scallops and remove the small, fibrous muscle (the “foot”) on the side by pinching, pulling or cutting with a paring knife. Pat dry. Wrap each scallop with half slices of bacon and secure with a toothpick. Bacon-wrapped scallops can be refrigerated for up to 6 hours or cooked immediately.
Preheat broiler with rack approximately 8” from the heating element. Line a small sheet pan with foil for easy clean up. Brush both sides of wrapped scallop with glaze. Broil (bacon side up), turning once, for 3-4 minutes on each side until scallops are opaque and bacon is crispy. If you desire crispier, turn again for 1-2 minutes on each side, checking closely. Enjoy!
