This is where the magic happens. Led by Catherine Ferraresi and Kelly Wright, the Test Kitchen is the proving ground for Gustare’s cache of fresh and flavorful recipes. If you find it here, the recipe has been refined and perfected , so guests can cook with confidence. The TK began as a cooking club, in the same spirit of those Catherine attended and led living in California, the Midwest, France and Holland. It has since evolved into a culinary incubator where Catherine and Kelly, a classically trained pastry chef, develop recipes that are easy to execute at home.
Each season in the Test Kitchen, Catherine invites Gustare’s retail store managers and special guests to test a selection of recipes using some of Gustare’s newest or seasonal items before they are introduced in the tasting rooms. These items are the focus of the evening’s menu from cocktail to dessert. When everyone arrives, the group discusses who will make which course, individually or partnered, and then they get to work! The honest critique of the food happens as the evening progresses, followed by further testing until the recipes are fully developed for publication. The idea is to create easy-to-follow recipes consistent with many aspects of the Mediterranean diet.
The recipe development process is simple and practical: inspiration + creativity = recipe development testing and tasting retesting, tasting and refinement.
