
Tiny Tacos with Coco-Lime Black Beans & Avocado Cream

Ingredients

1, 10oz bag Tostitos Tortilla Chips, Multi-Grain Scoops
Beans
-
1, 15.5oz can black beans
-
2 tbsp. fresh lime juice

1 tbsp. Gustare Coconut Balsamic Vinegar
-
¼ tsp. salt
-
Pinch of pepper
-
½ tsp. cumin
Avocado Cream
-
2 ripe avocados
-
½ cup sour cream
-
2 tbsp. Gustare Grapefruit Balsamic Vinegar

2 tbsp. Gustare Persian Lime Olive Oil
-
2 tbsp. fresh cilantro, finely chopped

2 tbsp. fresh dill, finely chopped, plus more for garnish

½ tsp. salt
Directions
Combine all ingredients for the beans in a saucepan. Cook on low heat for 5 minutes, until just heated through.
Add all ingredients for Avocado Cream to the bowl of a food processor and process until just smooth and creamy.
To serve:
To each tortilla scoop, add a teaspoon of beans, top with avocado cream and a tiny sprig of dill for the finishing touch. Enjoy!
