Watermelon Cucumber Salad

The perfect side salad for those hot summer days. Crunchy bites of cucumber and juicy watermelon combined to make a refreshing dish.
Ingredients

6 cups watermelon, cubed

4 Persian cucumbers (mini cukes), cut on a diagonal

¼ cup shallots, thinly sliced

1 tbsp. dill fronds, plucked in small pieces, not chopped

3 tbsp. Gustare Cucumber Melon Balsamic Vinegar

2 tbsp. Gustare Persian Lime olive oil

Zest of 1 lime

¼ tsp. sea salt
-
¼ tsp. freshly ground black pepper
Directions
Add watermelon, cucumber, shallots, and dill to a large bowl.
In a separate bowl or vinaigrette shaker, add balsamic, olive oil, zest, and seasonings. Shake until smooth and emulsified. Add about half the vinaigrette to watermelon bowl and toss gently. Add more if desired. Refrigerate until ready to serve. Enjoy!
Recipe Note
Optional: Serve with chunks of goat cheese or big crumbles of feta. Finish with a sprinkle of Fleur de Sel.
