Directions
Preheat oven to 350º. Add a rack to the roasting pan and pour broth into the pan.
If desired, score top portion of ham in a diamond pattern, making shallow cuts about ¼” deep and 1” apart. If desired, stud with a whole clove into each diamond created. Set ham in a roasting pan. Prepare glaze
In a small saucepan, add olive oil, balsamic vinegar, light brown sugar, honey, and mustard on medium low heat and whisk to combine, stirring until sugar dissolves. Lower to simmer and cook for 2 additional minutes.
Add ½ cup of glaze on all sides of the ham. Loosely cover the roasting pan with foil and place in the oven for 1 hour. Remove pan from oven and increase oven temperature to 425º.
Brush ham with another ½ cup of glaze and return to the oven for 20-30 minutes, uncovered. Check occasionally to be sure the glaze doesn’t burn. Remove from the oven and let rest for 10 minutes before slicing.
Garnish your platter with greens, herbs, and fruits of your choice. Enjoy!
