Maple Balsamic-Bacon Vinaigrette Over Wilted Baby Spinach

  1. Place spinach in a large serving bowl. In a small saucepan over medium heat, add the New England Maple balsamic,  wine vinegar, mustard, half the shallots, salt, pepper, and half the crumbled bacon.
  2. Gently warm while whisking. Remove from heat before it reaches a simmer. Allow to cool for a minute, and then whisk in the olive oil to emulsify. Adjust seasoning.
  3. Gently dress spinach with warm vinaigrette and top with remaining crumbled bacon and shallot. Serve warm. Enjoy!
