Avocado Toast

2 ripe avocados

8-10 grape tomatoes, chopped

1½ tbls. chopped fresh chives

1 tbls. Gustare Grapefruit Balsamic Vinegar

big pinch of 1830 Sea Salt

freshly ground black pepper, to taste

2 slices marbled pumpernickel-rye bread

2 tbls. Gustare Pepperoncino-Garlic EV Olive Oil


  1. In a medium bowl, mash avocado with a fork, leaving some chunky bits for texture. Fold in tomatoes, chives, balsamic, salt and pepper.
  2. Toast bread in a toaster to desired doneness.
  3. Brush each slice with a tablespoon of olive oil. (If using a broiler, brush bread with olive oil before broiling.)
  4. Top each slice with avocado mixture. Finish with a little freshly ground black pepper. Enjoy!


Top avocado toast with a fried egg, crumbled bacon, a few paper-thinly sliced radishes or your favorite micro greens.
