• 1 lb box of orzo
  • 1 15½ oz can chick peas (garbanzos)
  • 3 miniature English cucumbers, peeled, cut in half, seeded and sliced
  • 2 c chopped arugula
  • ¼ c fresh parsley, shopped
  • 3 tblsp. red onion, finely diced
  • ¼ c Gustare Arbequina Extra Virgin Olive Oil
  • ¼ c fresh lemon juice
  • 3 tblsp. Gustare Honeybell Orange Balsamic Vinegar



Cook orzo according to instructions on the box. Drain and rinse with cold water to chill. Drain again, thoroughly.


In a large bowl, combine all ingredients. Stir to combine flavors.


Serve immediately and enjoy!
