Lemony Orzo Salad…with thanks to Laurie Higgins

Ingredients
- 1 lb box of orzo
- 1 15½ oz can chick peas (garbanzos)
- 3 miniature English cucumbers, peeled, cut in half, seeded and sliced
- 2 c chopped arugula
- ¼ c fresh parsley, shopped
- 3 tblsp. red onion, finely diced
- ¼ c Gustare Arbequina Extra Virgin Olive Oil
- ¼ c fresh lemon juice
- 3 tblsp. Gustare Honeybell Orange Balsamic Vinegar
Directions

Cook orzo according to instructions on the box. Drain and rinse with cold water to chill. Drain again, thoroughly.

In a large bowl, combine all ingredients. Stir to combine flavors.

Serve immediately and enjoy!
